Penne takes its name from the Italian for ‘feather’ or ‘pen’, penna, as it’s shape was designed to resemble the nib of a traditional steel fountain pen. This shape was born in 1865, when Giovanni Batista obtained a patent for a diagonal pasta cutting machine. With it’s long, cylindrical shape, penne is perfect for carrying rich pesto and tomato sauces. Penne typically comes in one of two forms, smooth (penne liscie) and ridged (penne rigate). We at Pasta Santo have opted for penne rigate, as we believe the ridged texture allows for the sauce to coat the pasta more evenly, ensuring a consistency of flavour with every bite.
