Also known as ‘Sardinian Gnocchi’, this small shell-shaped pasta is a culinary staple on the island of Sardinia.

There are various accounts of the origin of it’s name, with some interpreters believing it to be dialect for ‘little calves’ (malloru is one Sardinian dialect’s word for ‘bull’), and others taking it to derive from the Latin for ‘morsel’, malollus.

It’s ribbed, tightly curled shape adds a wonderful amount of texture to a dish, but it truly shines in the presence of chunky, meaty sauces.
