The crust is made from sable biscuits, lending it a distinctive velvety crispiness, while the interior is infused with the almond flavour of frangipane. The pears we use are of the finest quality, with a mellow, warm flavour. The cake is topped with caramelised almond flakes, providing a feast for the eyes in their soft caramel hues, as well as to the nose in their mouthwatering aroma.
